3 c. sweet potatoes, mashed, after boiling (can also use 1 large can of Trappey's yams, 2 lb. 8 oz. size)
1 c. sugar
2 eggs
1 small can evaporated milk (use about 3/4 of the can)
1 tbsp. vanilla
1/2 c. butter, softened

Topping:
1 c. brown sugar
1/3 c. flour
1/3 c. butter (softened)
1 c. chopped pecans

Directions:
Directions:
Mash potatoes & blend all ingredients together. Pour into buttered casserole dish (3 qt.). Put topping evenly over potatoes.

Topping: Mix all ingredients thoroughly with whisk, will be lumpy. Sprinkle over potatoes until fully covered. Bake at 350 for 30 minutes (some ovens may takes 45 minutes). Topping will be crisp.

Cajun recipe, always served at Thanksgiving. Is sweet & almost tastes like dessert. It's a family favorite!
