1/3 c. plain fat-free yogurt
1 1/2 tbsp. mayonnaise
2 tsp. fresh parsley, chopped
2 tsp. green onions, chopped
2 tsp. Dijon mustard
1 tsp. capers
1/4 tsp. ground black pepper
dash hot pepper sauce




Salmon Croquettes Ingredients:
1/3 c. plain fat-free yogurt
1 tbsp. Dijon mustard
whites of 2 large eggs
cooking spray
1/2 c. onion, chopped
1/4 c. celery, chopped
1/4 c. red pepper, chopped
1 1/2 c. panko, divided
1/4 tsp. dried tarragon
1/8 tsp. ground black pepper
6-7 oz. salmon
4 tsp. butter

Combine all sauce ingredients in a bowl, cover & chill. To prepare croquettes, combine yogurt, mustard, & egg whites in a bowl, set aside. Heat a nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion, celery & red pepper, cook 4 minutes or until tender. Cool slightly. Combine onion mixture, yogurt mixture, 1/2 c. panko, tarragon, pepper & salmon in a bowl, toss gently. Cover & chill 10 minutes. Divide salmon mixture into 8 equal portions, shaping each into a 1/2 in. thick patty. Coat patties evenly with remaining panko. Cover & chill 20 minutes. Melt butter in a large nonstick skillet over medium-high heat. Add patties, reduce heat to medium. Cook 4 minutes on each side or until lightly browned. Serve immediately with sauce.
