4-8 lb. prime rib
salt and pepper

Directions:
Directions:
1. Let meat stand at room temperature 1 hr. before cooking
2. Preheat oven to 375. Rub meat well with salt, sprinkle with pepper
3. Place meat fat side up in a shallow roasting pan
DO NOT COVER
4. Put roast in oven , cook for 1 hour. Turn off heat - DO NOT OPEN OVEN DOOR
5. 30-40 minutes before serving; turn oven on again @375, cook meat for those remaining 30-40 mins..
6. Open oven door, remove roast.

Recipe works well for any size roast. If it is too rare, heat up aujus and let slices sit in aujus for a few seconds. Meat will cook more.
