3/4 c. rice, cooked or uncooked
1 onion, diced small
1 lb. ground beef
4 peppers
15 oz. can tomato sauce
seasonings to taste

Directions:
Directions:
Fry ground beef til brown. Add onion and rice, cook a few minutes to soften onions. Put the tomato sauce in pot large enough to hold the 4 peppers. Cut the tops off the peppers by making a large circle around the top so that the stuffing will stay in, clean out. Stuff the beef mixture in the peppers. Place peppers in pot with tomato sauce trying to keep them upright. Spoon a little sauce over each pepper. Cover and cook for 1 hour.

Buy peppers that have a nice flat bottom if you can. You can add some tomato sauce and green pepper (chop up the tops) to your meat mixture too. Add a little water to the tomato sauce in pan if there is not enough for peppers to sit in or add another can of sauce. Use sauce to pour over peppers when serving.
