2 tablespoons butter
1 medium chopped onion
1 (10 3/4 ounce)can of cream of potato soup undiluted
3 1/2 cups of milk
1/4 teaspoon of ground red pepper
1 1/2 pounds medium size fresh peeled shrimp (3 cups of cooked chicken can be subst)
1 cup shredded Monterey Jack cheese ( more if desired)
Crackers for topping if desired

Directions:
Directions:
Melt butter in a dutch oven over medium heat and add onion and saute for 8 minutes until tender. Stir in cream of potato soup, milk and pepper; bring to boil. Add shrimp, reduce heat, and simmer, stirring often...about 5 minutes or just until shrimp start turning pink. Stir in the cheese until melted and garnish with cracked if desired.
