about 2 c. small carrots
1/4 c. sugar
3- 4 slices crystallized ginger
salt and pepper to taste
Butter or margarine

Directions:
Directions:
Cover carrots slightly with water in a pot. Salt to tatste.
On medium heat, boil until slightly tender.
Add sugar, ginger and butter.
Cover and simmer on med. low until tender.
If you want pepper, add it sparingly.
Allow to sit covered for a little while.
Serve hot.
