Ingredients:  
3 Qts. water
Put turkey carcass in large pot - break to fit in
Onion
Salt
2 tsp. or 1 chicken bouillon cube
Simmer 1 1/2 hours. Cut off meat from carcass when cooled: return meat to pot.
Add:
4 cups any kind of vegs. you want
1/2 cup uncooked noodles or rice
oregano, thyme, pepper
1 can diced tomatoes (16 oz.)

Simmer all for 1 hour.

A great way to use all that turkey on the bone. Use frozen mixed veggies to make easier. You can throw in some of the Thanksgiving leftovers too!
