1 medium head cauliflower or 1 bag frozen
1/2 lb. mushrooms sliced
1/4 cup diced green pepper
1/3 cup butter
1/4 cup flour
2 cups milk
1 tsp salt
5 slices pimento cheese or American and 2 tbsp. of pimentos from jar

Directions:

Heat oven to 350 - 1-1/2 qt casserole dish

Separate cauliflower into medium pieces. Cook covered in boiling water for 10-15 minutes. Drain
Brown mushrooms and green peppers lightly in butter, blend in flour and gradually stir in milk and stirring constantly cook until thick. Add salt. Place 1/2 cauliflower In dish and cover with cheese and1/2 of the sauce. Repeat layer. Sprinkle with Paprika. Brown lightly for about 15 minutes.
