1/2 c. mozzarella cheese, shredded
1/2 c. white cheddar, shredded
1/2 c. Parmesan, shredded
1/4 c. cream cheese, softened
1/2 c. Gouda, shredded
1 tsp. truffle oil
salt and pepper to taste
2-3 tbsp. butter, unsalted
1 French baguette

Directions:
Directions:
In medium bowl, combine all five cheeses and truffle oil. Season with salt and pepper. Slice the baguette into thin, oblong slices and match up in similar pairs. Butter one side of each baguette slice and spread cheese mixture onto the unbuttered side. Top with matching slice, butter side up. Heat a large saute' pan to medium heat and add buttered sandwiches. Toast on both sides until golden brown and cheese mixture is melted. Makes 14 mini sandwiches.

Great served with Creamy Tomato Soup. (1 can Campbell's Tomato Soup, 1/4 c. heavy whipping cream, 2 tbsp. milk - heat in microwave for 2 1/2 minutes). Great for dipping sauce for mini grilled cheeses. Shauna's recipe.
