3 cups grated, unpeeled raw zucchini
3 cups sugar
1 1/2 cups canola oil
4 eggs
3 cups flour (I use 1 cup all purpose, 2 cups whole wheat to make it more like a bread)
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
Powdered sugar (for dusting)

Mix all ingredients and beat well. Spread into a 9 x 13-inch pan. Bake 1 1/2 hours at 350 .If using whole wheat flour, bake less time-check center of cake with a toothpick to ensure it's done. Dust with powdered sugar.

This is a delicious cake! Using the whole wheat flour makes this recipe more like a bread, and then you can even justify eating it for breakfast! Also, feel free to add some extra cinnamon and allspice for more flavor.
