2-8 oz tubs of whipped topping
2 small pkgs. of instant vanilla pudding
4 cups of milk
I box of honey graham crackers
2-3 oz pkgs of cream cheese softened
1 cup powdered sugar
2-3 tsp of milk
1 tsp vanilla (optional)
2 cans of cherry pie filling

Directions:
Directions:
Mix 2 pkgs of instant vanilla pudding with 4 cups of milk in a large mixing bowl for about two minutes. Let sit a few minutes while it thickens.
In a medium sized mixing bowl mix the cream cheese with the 1 cup of powdered sugar adding the 2-3 tsp of milk to thin it out a little. If using vanilla add the vanilla first before the 2-3 tsp of milk.(the milk is added to keep it from being too thick)
Fold in one of the containers of whipped topping until blended. Set aside.
Fold in the other container of whipped topping into the pudding mix until blended. Set aside.
Into a 9 x 13 baking pan cover the bottom of the pan with a layer of graham crackers (if needed break apart the crackers to fit)
Now pour 1/2 of the pudding mixture on top. Gently spread across the crackers. Now lay another layer of the crackers over the pudding mixture.
On top of this pour the cream cheese mixture. Gently spread across the crackers. (This mixture is suppose to be thicker than the pudding mixture so it might be a little hard to spread)
Now lay another layer of crackers on top of the cream cheese mixture. Pour the other half of the pudding mixture on top and spread gently.
Now you should have a few crackers left. Take 2-3 and crush them up and sprinkle over the top.
Open the two cans of cherry topping and pour over the top gently spreading. Best if refrigerated overnight to soak up the crackers.

Can easily be increased by adding another box of pudding mix with milk to pudding mixture. Every holiday my family used to ask me if I was making that cherry cheesecake stuff so that is what I named it.
