Ingredients:  
1/4 c extra, really extra, virgin olive oil
1/4 c white balsamic or rice vinegar
1/2 tsp sugar
1/2 tsp coarse salt
1/4 tsp freshly ground black pepper
1/2 c chopped fresh mint
1/2 small cantaloupe, cut into chunks(approx 2 cups)
1 c cherry or grape tomatoes, cut into halves
1/2 c chopped, peeled cucumber

Directions:
Directions:
Whisk oil, vinegar, sugar, salt and pepper in a small bowl. Combine cantaloupe, tomatoes and cucumber in a large bowl. Add dressing; toss well. Serves 4
