Mexicali Beef and Cabbage Recipe

3 cups cole slaw mix (packaged) or 3 cups finely chopped cabbage
cup water
1 lb ground beef
1 package taco seasoning
2 to 3 eggs
2 tablespoons cream
2 cups shredded cheddar of Mexican blend cheese
cup salsa + salsa for topping
Sour Cream for topping

Brown ground beef in a large skillet; add taco seasoning, water, cup salsa and mix well.
Mix cabbage into beef mixture. Cover and steam while preparing the egg mixture.

In a bowl, combine eggs and cream; whisk completely. Add 1 cup of cheese. Pour egg mixture into bottom of 9 x 13 pan. Spoon the cabbage/beef mixture on top of the egg. Press down slightly to condense meat. Sprinkle remaining cheese on top.

Bake at 350 for 20 30 minutes or until edges become brown and eggs are cooked on bottom. Let rest for 10 minutes before cutting.
