6 ounces cubed pancetta ham
2 sheets Pepperidge Farm puff pastry – thawed (can be found in your grocery store’s frozen section)
2 cups shredded mozzarella or Italian 5 cheese blend
½ cup butter
¼ cup olive oil, plus 1 Tbsp. to use with pancetta
3 cloves Garlic – minced
1 tsp. Italian herbs – dried

Directions:

Preheat oven to 425 degrees
Sauté at medium heat, ham and 1 Tbsp. olive oil until ham is slightly crispy
Put butter and garlic in a glass cup and microwave until melted. Add olive oil and herbs.
Roll out pastry sheet and brush with 1/3 of the butter mixture. Add 1/3 of ham and cheese. Starting at the bottom of the square, roll up the pastry. Place on a cookie tray lined with parchment paper. With a sharp knife, cut ¾ inch slices about ¾ the way through the roll. Using both hands, fan out the sliced roll. Repeat the process with the second roll. Top both rolls with the left over cheese, ham and butter mixture.
Bake for 10 minutes at 425 degrees. Lower the heat to 375 degrees and bake until golden brown and crispy (about 10 – 15 more minutes). Serve immediately.
