2 Chicken Breasts
2 C. Mushrooms, Sliced
4 T. Butter
2 tsp. Olive Oil
1/2 C. Marsala or White Wine
2 T. Parsley, Chopped
Salt and Pepper

Directions:
Directions:
Melt 2 T. butter in a heavy skillet over medium heat. Add 2 tsp. olive oil and mushrooms. Saute until tender and transfer mushrooms to a plate. Lightly salt and pepper both sides of chicken breasts and place them in skillet. Turn once after 4 minutes or so and reduce heat to low. Distribute remaining butter around chicken. Add mushrooms to chicken. Drizzle wine over chicken and add parsley. Simmer for 7-10 more minutes until wine and butter are reduced.
Slice and plate the chicken and spoon mushroom sauce over it.
