4 medium boiling potatoes, about 1 1/2 lbs.
5 slices of bacon, cut into 1 inch pieces
1 medium onion, chopped
1 T all purpose flour
1T sugar
1/2 t salt
1/4 t celery seed
Dash of pepper
1/2 c water
1/4 c white vinegar

Directions:
Cook potatoes and cool. cut potatoes into 1/4 slices or cube if desired.. Cook bacon until crisp. Remove bacon from skillet and reserve. Cook onion in bacon fat until tender. Stir in flour, sugar, salt, celery seed, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat. Stir in water and vinegar. Heat to boiling, stirring constantly. Boil and stir 1 min., remove from heat. Stir in potatoes and bacon. Heat, stirring gently to coat potatoes until hot and bubbly.
