1 ¼ beef top round, cut about very thin
¼ cup vegetable oil
1 cup water or beef stock
1 medium onion cut ¼ inch slices
½ teaspoon garlic salt or powder
2 medium green peppers cut into strips
1 tablespoon cornstarch
2 tablespoons soy sauce
2 medium tomatoes

Trim fat from beef and cut into thin strips. Heat oil in skillet – add beef and cook turning frequently until brown about 5 minutes. Stir in onion, garlic and water or beef stock. Heat to boiling and reduce heat – cover and simmer for 12 to 15 minutes. Add green peppers and simmer for 5 more minutes. Blend cornstarch and soy sauce, stir into beef mixture. Boil and stir for 1 minute. Cut each tomato into slices or eighths and place on beef mixture. Cover, cook over low heat just until tomatoes are heated through about 3 to 5 minutes. Serve over rice.
