Casserole:
6 large sweet potatoes cooked & peeled
1 cup butter, softened
Juice of 2 oranges
Grated rind of 2 oranges
4 eggs
to 1 cup of sugar

Topping:
2 tablespoons butter
1 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1 cup chopped pecans

Casserole:

Beat potatoes with electric mixer until fluffy. Add butter, orange juice & rind, eggs & sugar, beat well. Spoon mixture into a 3 quart casserole. Cover with topping (below). Bake at 350 degrees for 30 minutes.

Topping:
Combine butter, sugar & flour in a saucepan; cook over low heat until sugar melts, stirring constantly. Add pecans.
