1 1/2 pounds ground beef
1 medium onion, finely chopped
2 tablespoons oil
3 cans (10 3/4 oz.) beef broth
2 medium potatoes, peeled and cut into 1/2 in. cubes
1 cup sliced celery
4 carrots, sliced
1 can (16 oz.) tomatoes, broken up
1 can (8 oz.) tomato sauce
1/2 cup barley
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 package (10 oz.) frozen mixed vegetables (optional)
1/2 cup parsley, minced (optional)

Brown ground beef and onion in oil; pour off excess oil. Add broth, potatoes, celery, carrots, tomatoes, tomato sauce, barley, salt, and pepper. Heat to boiling, reduce heat and simmer for 1 hour. Add mixed vegetables and cook 5 minutes longer. Serve, topped with parsley (optional). Makes 3 1/2 quarts.
