2 cups diced potatoes ( or to taste)
1/4 cup fat-free margarine
1 can sliced water chestnuts
1 onion,sliced
1 cup celery
1/2 gallon milk
1 cup fat-free Velveeta or cheese whiz

Directions:
Directions:
Boil potatoes until tender. Set aside. Saute onion and celery in melted margarine until tender. Salt and pepper to taste and then add potatoes and milk. Heat to a slow boil and add water chestnuts. Bring back to a boil and add cheese, stirring continuously until melted
