2 1/2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp shredded lemon peel
3/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground ginger
2 beaten eggs
1 1/4 cup sugar
1/2 cup cooking oil
1/4 tsp orange extract or vanilla
2 cups shredded zuchini
1 cup chopped walnuts or almonds or pecans

Directions:
Directions:
In a lg bowl stir together flour, baking powder, baking soda, lemon peel, salt, cinnamon and ginger; set aside.
In another bowl beat together eggs, sugar, oil and extract. Add egg mixture to flour mixture along with zuchini and nuts, mix well.
turn into greased loaf pan, 9x5x3.
Bake 350 for 50-60 min.check for doneness by inserting knife or toothpick and it comes out clean, Cool in pan 10 min, remove and completely cool for better slicing cool overnight in plastic wrapping............

This is great to stick in the freezer during the winter and pull it out to serve with soup dinners.
