2 medium onions, chopped
2 medium green peppers, chopped
2 lbs. ground beef
2 cans (28 oz. each) diced tomatoes, undrained
1 can (8 oz.) tomato sauce
1 1/2 T. chili powder
1 T. sugar
2 tsp salt
2 cans (15 oz each) kidney beans, undrained

Peel and chop the onions. Cook the onions and the beef over medium heat about 15 minutes, stirring occasionally. Strain and discard the fat.

In a large stock pot, combine the beef mixture with the all the remaining ingredients except the beans. Stir until mixed and bring to a boil. Then reduce the heat and simmer 1 hour 15 minutes.

Stir in the beans with their liquid and heat to boiling again. Then reduce the heat to a simmer and cook for another 15 minutes.

Serve with cheddar cheese.

Ang doesn't care for the texture of the kidney beans so sometimes I puree them before adding them to the chili. You still get the health and flavor benefits of the beans that way!
