1 large mango, ideally an Alphonso mango, coarsely chopped
3 cups plain yogurt
Generous 1 cup cold water
2 Tbsp superfine sugar, or to taste
Fresh lime juice, to taste
Ice cubes
Ground ginger, to decorate (optional)

Directions:
Directions:
1 Put 9oz/250g of the mango flesh in a food processor or blender with the yogurt and whiz until smooth (use any remaining mango for a fruit salad). Add the water and whiz again to blend.

2 The amount of sugar you will add depends on how sweet the mango is. Taste and stir in sugar to taste, then stir in the lime juice.

3 Fill 4-6 glasses with ice cubes and pour the mango mixture over. lightly dust the top of each glass with the ground ginger, if you like.
