1/3 cup Shortening 2/3 cup Sugar 2 Eggs 1/2 tsp salt 1-3/4 cup sifted All Purpose Flour 2-3/4 tsp double acting Baking Powder 3 mashed ripe bananas
Preheat oven at 3in 50º. Beat shortening with electric mixer. Gradually add sugar. Beat until light and fluffy. Add eggs and beat until thick and pale lemon in color. Sift dry ingredients together. Add bananas; then add to shortening mixture. Grease bottom of pan and bake bread for 40 minutes or until toothpick comes out clean.
