Cajun Jambalaya Recipe

2 teaspoons olive oil
8 ounces hot smoked sausage, diced (in my world..which BTW is a fabulous place..the spicier the better)
1 onion, diced
1 red bell pepper, diced
1/2 cup diced celery (optional)
2 tablespoons chopped garlic
1/4 teaspoon cayenne pepper
salt and ground black pepper to taste
2 cups uncooked white rice
3 1/2 cups chicken stock
2 bay leaves
2 teaspoons Worcestershire sauce
2 teaspoons hot pepper sauce

Heat oil in a large pot over medium high heat. Sauté sausage until lightly browned, about 5 minutes. Stir in onion, red pepper, celery and garlic. Season with cayenne, salt and pepper. Cook 5 minutes, or until onion is tender and translucent. Add rice, and then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until rice is tender. Remove the bay leaves. Mix the Worcestershire and hot pepper sauce together then stir in the rice mixture. Cover and cook 3 more minutes. If all of the moisture is not absorbed, allow to cook on low for a few more minutes with the cover removed.

If you are feeling creative, go ahead and add: a can of kidney beans (drained), diced cooked chicken, shrimp, or whatever those cool Cajun people eat. It will also live things up if you insist that everybody speak with a Cajun accent throughout the meal.
