2C red onions sliced thin 1C carrots sliced thin
2 cloves garlic minced
1-can white cannellini beans drained and rinsed
1C reduced-sodium chicken broth 4 boneless
skinless chicken breasts salt and pepper to taste
2Tspn. chopped fresh rosemary leaves
1/2C sliced roasted red peppers from jar
4C chopped swiss chard or spinach
1 crusty loaf of bread like French or Sourdough
2Tbsp. extra virgin olive oil 1 clove garlic

Directions:
Directions:
Arrange onion,carrots and minced garlic in bottom
of a slow-cooker. Place beans on top of vegetables
Pour on the chicken broth. Season chicken and place on top of beans and vegetables. Sprinkle with
rosemary.Place roasted red peppers on top of chicken. Arrange swiss chard around chicken.
Cover and cook on low 6-8 hours or high 3-4 hours.
Slice bread and drizzle with olive oil and toast'
Rub hot bread with garlic clove and serve with meal.
