Lemon Kiss Cookies Recipe

1 1/2 c. butter
3/4 c. sugar
1 tbsp. lemon extract
2 3/4 flour
1 1/2 cups ground almonds

50 chocolate kisses

icing sugar

1/2 c. melting chocolate

Directions:
Directions:
In a large bowl, beat butter, sugar, and lemon extract until light and fluffy. Add flour and almonds; beat until well blended.

Heat oven to 375F. Shape one scant tablespoon of dough around each chocolate kiss, covering completely. Roll in hands to form ball. Place on an ungreased cookie sheet.

Bake cookies for 8-12 minutes or until set and bottom edges are light golden brown. Cool one minute then remove from cookie sheet. Cool completely.

Drizzle with melted chocolate. Once chocolate is set, sprinkle lightly with icing sugar.
