1 Lb. Lean Ground Beef
1 Med. Onion, chopped
1 can (15 oz) Tomato Sauce
1 cup of water
2 tbs. Chili Powder
12 oz. Can Corn Nibblets
1 cup Olives, pitted and drained
1 cup Yellow Corn Meal
2 cups Milk
1 can chopped mild chilies
Salt and Pepper to taste
Red Pepper Flakes to taste, optional
1 cup Shredded pepper jack cheese

In a large frying pan, brown hamburger and onions. Add tomato sauce, water, chili powder, chopped chilies, salt, pepper and pepper flakes if desired. Simmer, covered at very low heat for 45 minutes. Stir in corn and olives.

Mix milk and corn meal together and add to the mixture in pan. Add half of the shredded cheese. Cook 3 to 5 minutes until thickened. Pour in a 3 quart casserole dish.

Bake at 350 F for 40 minutes or until almost dry. Top with the remaining cheese.
