3 cups sugar (+ 1 cup)
1 cup thin cream (or 1 cup milk)
2 tbsp. butter
3 cups pecans

Directions:
Directions:
Put sugar in a saucepan and stir in cream. Boil without stirring, then test for doneness by dropping a little bit into cold water to see if forms a ball.

Melt extra cup of sugar and two tablespoons butter in a skillet until it dissolves into caramel syrup. Pour caramel syrup into cream syrup. Boil up once. Remove from fire immediately, beat until thick, then add nuts. Drop by spoonfuls onto a marble slab or greased tin and let cool.
