1 lean pork loin roast
1 small jar crushed garlic
salt & pepper
1 large onion
mustard

Directions:
Directions:
Rinse the pork loin roast & pat dry with a paper towel. Coat roast with a thin layer of yellow mustard. Roll the roast in the crushed garlic to form a very thick coating over the entire roast. Sprinkle with salt & pepper. Place in roasting pan with a peeled onion. Cook at 325 until meat thermometer reaches 170.
