32 oz. fat free chicken broth
1 can Rotel tomatoes
1 large head of broccoli, cut in small florets (or 12 oz. bag of pre-cut broccoli - cut smaller if large pieces)
8 oz. light Velveeta cheese, cubed
2 T. cornstarch, mixed to a paste with 1/4 c. water

Directions:
Directions:
In a large soup pot, bring the broth and tomatoes to a low boil; add broccoli and cook until tender. Reduce heat to low. Add cheese and stir until melted. Slowly add the cornstarch paste and cook until soup is slightly thickened.
