2 C. whole milk
1/2 C sugar
2 T. butter

1/2 C. sugar
1/4 C corn starch
3 whole eggs
2 C whipping cream
1 t. vanilla
1 C. flaked coconut (sweetened)

Directions:
Directions:
Mix first 3 ingredients and heat to boiling point. Mix the next 3 ingredients, and add to the first mixture. Cook until thick and smooth. Add the coconut. Cool. Add 1 t. vanilla. Whip 2 C whipping cream to stiff peaks. Fold 1/2 C of the whipped cream into the cooled custard. Pour into a baked pie shell. Top with the remaining whipping cream, sweetened to taste with 1 T sugar (+/-) and bits to toasted coconut. Keep in the fridg.

I made 2 of these for the WCR Dessert Auction one year, and they sold for $75 each! I thought about quitting my job and just baking pies!
You could omit the coconut and add sliced banana for a Banana Cream pie.
