1 3/4 c Crisco Oil
1 1/2 c Sugar
2 large Eggs
1 T Cocoa Powder
2 oz Red Food Coloring
2 1/2 c Flour
1 tsp Salt
1 c Buttermilk
1 tsp Baking Soda
1 tsp Vanilla
2 T Apple Cider Vinegar
Frosting:
1 stick Butter softened
8 oz pkg Cream Cheese
1 tsp Vanilla
16 oz pkg Confectioner’s Sugar
1 c Chopped Pecans (optional)

Cake:
Grease and flour 3 9” cake pans. (or 13 x 9 pan) I like to use the EZ Foil disposable baking pans for quicker clean up.
Cream oil and sugar, add eggs one at a time, beating well after each addition.  Mix gently together in small bowl, cocoa and coloring together, then add to cream mixture.  Add flour and salt.  Add alternately with buttermilk to cream mixture.  Sprinkle soda over batter.  Pour vinegar and vanilla over batter.  Stir until well blended.  Bake at 350º for 25 to 30 minutes or until toothpick comes out clean from center. DO NOT OVER COOK

Frosting:
Cream softened butter and cream cheese, add the vanilla, then 16 oz of confectioner's sugar. Whip until smooth. Add 1 c pecans if desired.
