3 T EVOO
1/2 small onion, chopped
2 garlic cloves, pressed
1 c diced tomatoes, with juice, plus 1/2c water
1/2 c dry white wine
1/2 tsp fresh oregano, chopped
1/2 tsp salt
1 1/2 lbs large shrimp, peeled and deveined
4-6 oz feta cheese, crumbled
2 T chopped parsley

Directions:

Heat oil in a large nonstick skillet over medium heat. Saute onion for 3 minutes, until soft. Add garlic and cook 1 minute more. Add tomatoes with their juice, water, wine oregano. and salt to skillet. Cook 10 minutes, stirring occasionally, until mixture tickers.

Add shrimp to skillet, cook 2 to 3 minutes until set cooked through. Stir in cheese and parsley. Serve immediately.

Can be eaten as a stew or served over rice.
