Scallop Starter Recipe

4 King Scallops (or 6 if you have a big appetite )
1 slice of prosciutto
1 tbsp olive oil
S&P to season (seasalt and cracked black pepper preferred)
150g frozen peas
2 tbsp double cream (can use crème fraiche as low fat alternative)

Directions:
Directions:
Cook peas in boiling water until tender. Drain and place in blender with cream. Blitz till a puree and add a little cooking water to thin if required. Add S&P.
Grill or oven bake prosciutto until crispy and cut into thin slices
Clean the scallops (and take off roe preferably), season with S&P and pan fry each side in olive oil until cooked through and golden
Serve the pea puree and add scallops on top. Sprinkle with prosciutto strips.
