Ingredients:  
1 cucumber, chopped in small pieces
1 fresh tomato, remove seeds and chop in small pieces
1/4 cup sliced kalamata olives
1 lime
2 cups hummus
1 cup fresh spinach
4 oz. goat cheese
crackers

Directions:
Directions:
Mix the cucumber, tomato, olives and squeeze one lime on it. In flat bowl, layer hummus, top this with the spinach (break it into small pieces).
Drain the lime juice off the veggies and layer them on the spinach. Crumble goat cheese on top.
Serve with crackers or pita chips.
