Cucumber preparation:
9 lbs small cucumbers
salt
water
vinegar
4 tbsp powdered alum

Pickling syrup:
3 pints vinegar
3 lbs sugar
1/2 oz of mixed pickling spices
Stick cinnamon

Directions:
Directions:
Place cucumbers in salt brine strong enough to float an egg. Soak cucumbers for 3 days. Soak out all of the salt by soaking 1 day in clear water. Next day bring mixture of 1/2 water - 1/2 vinegar and 4 tbsp powdered alum to a boil and add to drained cucumbers. Keep hot for 2 hours. Mix 3 pints vinegar, sugar, cinnamon stick and mixed pickling spices and boil for 5 minutes. Put cucumbers in jars, turn upside down to drain; then add boiled vinegar mixture to cucumbers and seal.

Large cucumbers can be used. Cut cucumber lengthwise, remove seeds and cut into large chunks.
