Cake:
2 cups sugar
2 cups flour
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
1 1/2 cups vegetable oil
3 cups grated carrots
4 eggs

Frosting:
1 lb powdered sugar
1, 8 ounce package cream cheese
1/2 cup butter
1 cup nuts
2 tsp vanilla

Directions:
Directions:
Cake: Mix dry ingredients in a large bowl. Add oil and blend. Add eggs and carrots. Pour into 9X13 inch baking pan and bake at 350º for 30 minutes.

Frosting: Cream sugar, butter, and cream cheese. Add powdered sugar and vanilla and mix well. Stir in nuts and frost cake.

This recipe could also be baked in a 13"X18" sheet pan to produce Carrot Cake Bars. Baking time would be reduced to approximately 20 minutes.
