shallots
panchetta
olive oil
pork neck bones
small piece lean pork
small piecebeef
8oz. can tomato paste
2 12oz cans crushed tomatoes
fresh basil
dried oregano
red wine

Directions:
Directions:
in a fry pan brown neck bones beef and pork
in a stock pot or heavy aluminum pot saute chopped garlic about 1 T and 3T shallots 1/4 lb of diced panchetta until lightly golden then add tomato paste and stir constantly do not allow to burn
adding a little water at a time until you use about a can from the paste. Then add about 3 to 4 basil leaves and the crushed tomatoes. Bring to a full simmer and add the meat. Deglaze the fry pan from the meat with about 1/4 c of red wine and add it to the sauce. Season the sauce with salt and pepper to your taste cook on a slow simmer for about 21/2 hrs add your favorite meatballs for about another 1/2 hr and serve over your pasta of choice.
