1 1/2 Pound Bing Cherries Pitted about 4 1/2 Cups
1 Cup Sugar
1/4 Cup Minute Tapioca
1 Tablespoon Lemon Juice
1 Teaspoon Almond Extract
1 Tablespoon Butter

Directions:
Directions:
Preheat oven to 400 degree
Toss Cherries with sugar, Tapioca, lemon juice and almond extract until evenly coated
Let stand 15 minutes
Fill bottom of pie crust with the mixture.
Cut the butter into small pieces and place on top if pie filling
Cover with 2nd rolled Crust
Vent with sharp knife.
Paint top of pie with pastry brush using milk
This promotes browning
Cook at 400 for 45 to 50 minutes

I use a Powdered sugar glaze applied when pie is removed from the oven !!!
