Italian Chicken and Rice Recipe

4-6 boneless, skinless chicken breasts
2 sweet onions(sliced)
1 can mushrooms
1 can tomato sauce(small)
1 jar favorite spaghetti sauce
Medium grain rice
1 box chicken broth
Italian seasoning
Salt and pepper

Directions:
Directions:
-In a glass baking dish, cover bottom with 1 sweet onion(sliced).
-Pour tomato sauce over onions
-Season the chicken breasts with salt, pepper and Italian seasoning, place on top of onions/tomato sauce.
-Cover chicken with second sweet onion(sliced) and mushrooms
-Cover dish with tin foil.
-Place in 450º oven for 15 minutes
-Remove tin foil and pour excess water off chicken.
-Cover with spaghetti sauce
-Cover with tin foil
-Cook for another 20min, or until chicken is tender.
RICE-
-Bring 1 box chicken broth to a boil.
-Add 1 3/4 cup medium grain rice and stir
-Turn stove down to low and cover
-Let sit for 20 minutes, then fluff with fork

Place chicken and sauce over rice and serve with a nice green salad.
