2 T. red wine vinegar 2 T. Dijon mustard 1 T. snipped fresh tarragon 3 T. olive oil 2 Romaine hearts, halved lengthwise 1/4 c. crumbled blue cheese freshly ground pepper and sea salt; to taste

Directions:
Directions:
Mix vinegar, mustard and tarragon in small bowl. Gradually whisk in 2 T. of olive oil. Season with salt and pepper. Brush romaine halves the 1 T. oil. Grill, cut side down, directly over medium coals 4-6 minutes or until slightly charred and wilted. Remove romaine halves from grill and place on plates. Drizzle with vinaigrette and sprinkle with cheese. Serve immediately.
