1/2 c. water
1/2 c. light brown sugar
1/4 c. balsamic vinegar
1/4 c. peach preserves
2 precooked chicken breasts, diced
1/4 c. instant brown rice

Directions:
Directions:
Place water, brown sugar, vinegar, and peach preserves in large skillet. Bring to a boil, stirring constantly. Lower heat and simmer for five minutes. Add diced chicken breast and simmer for another five minutes. Add rice, cover and cook for 5-6 minutes until most of the liquid is absorbed. Makes four servings
