Make Hollandaise Sauce (recipe this section)
1/4 cup white wine
2 Tablespoons tarragon vinegar
2 teaspoons chopped fresh tarragon or 1 teaspoon dried tarragon
1 Tablespoon chopped shallots
1/4 teaspoon freshly ground pepper

Directions:
Directions:
Bring ingredients in small sauce pan to a boil and cook rapidly until liquid is reduced to about 2 Tablespoons or less. Then mix with Hollandaise Sauce.
