3 qt strawberries (hulled & divided)
1 1/2 C sugar
6 T cornstarch
2/3 C water
3 drops of red food coloring if desired
1 C heavy cream
1 1/2 tsp. vanilla instant pudding mix
1 - 10 inch deep dish baked pie crust (pastry or other crust of your choice - i.e., graham cracker, flour & nut etc.)

In large bowl or food processor mash enough berries to make 3 cups. In a sauce pan combine the sugar and cornstarch. Stir in the mashed strawberries and water, mix well and bring to a boil over medium heat stirring constantly. Cook and stir for about two minutes. Remove from heat and stir in red food coloring. Pour into a bowl an chill for about 20 minutes, stirring occasionally. Fold in the remaining berries. Pile into baked pie shell Chill for 2-3 hours. In a mixing bowl whip cream until soft peaks form. Sprinkle pudding mix over cream and whip until stiff. Pipe around edge or dollop on individual slices.
