Pan Seared Tilapia with Cucumbers Recipe

Ingredients: 4 tilapia filets 1/3 cup flour 1 pinch cayenne pepper 1/4 teaspoon paprika 1/2 teaspoon kosher salt 1/2 teaspoon black pepper 2 tablespoons butter 1 tanlespoons olive oil 1 lemon cut into 8 wedges (1 to squeeze on each dish and I for garnish)
Cucumbers 2 large cucumbers (English , Seedless) cut 1/4 inch thick 1 shallot thinly sliced 1/3 cup sour cream 2 tablespoons white wine 1 teaspoon butter 2 teaspoons olive oil salt pepper

Directions: |
Directions:Tilapia 1) combine your flour and seaonings in a bowl and put on a plate and set aside
2) coat the tialpia with your olive oil and dredge into the flour mixture
3) Heat up your pan on a medium to low heat with the 2 tablespoons of butter or olive oil which ever you prefer to cook with is fine add your tilapia one piece at a time add more butter or oil if needed per piece, cook until fork tender and white all the way through put in a shallow baking dish
Cucumbers 1) Heat oven to 200- 250 only top warm the tialpia if needed
2) in a large sauce pan cook your shallot on a low heat with the butter until translucent or soft
3) Add your sour cream and white wine and let simmer
4) prepare your cucumbers in a large bowl with the olive oil and salt and pepper make sure to coat well once coated add to your sauce pan and completely coat all the cucumbers let cook for about 5-7 minutes you still want the cucumbers to have a crunch to them
Together 1) After your cucumber sauce is done add the sauce to the top of the tialpia and serve

Notes: you can squeeze the lemon on right before serving or put in a bowl and let your guests do themselves ( this is what I did I dont prefer lemon on my fish! )
