2 tablespoons self raising flour (or plain flour with a little baking powder thrown in)
8 egg whites
1 1/2 tablespoon vinegar
3 1/3 cup powdered sugar
1 teaspoon vanilla

Filling:
1 pint heavy whipping cream (can use more)
3/4 teaspoon vanilla
3 tablespoon powdered sugar ( can use granulated)

1. Beat egg whites stiffly. Pour in sugar gradually and beat until very stiff (actually it doesn’t get very stiff). Add flour and beat in well. Lastly, beat in vinegar and vanilla. Place in a foil lined pan (I used a 12 x 14 broiler pan) and spread to the edges- heaping it so that the batter is deeper at the edges than the middle (or, you can use a very large plate- never have done this). Bake at 300 degrees for 1 1/4 hours. Allow to cool completely. If not used immediately, store in an airtight bag.

2.Sliced fruit to taste: strawberries, kiwi, mandarin oranges, canned passion fruit or pomegranate seeds, grapes, bananas, blueberries, blackberries, raspberries. Whatever you like!

Just before eating, whip the cream with the sugar and vanilla added, until stiff (but not turned into butter). Spread whipped cream over the baklava base. Arrange the fruit for pleasant appearance. Enjoy right away- it doesn’t keep (gets soggy).
