2 tsp. lemon juice
2/3 c. milk
2 1/3 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2/3 c. vegetable oil
2/3 c. bananas, very ripe & mashed
2 large eggs
2/3 c. walnuts or pecans, chopped (optional)

Preheat oven to 350. Place lemon juice & milk together in a measuring cup and set aside for the milk to "sour." Sift together flour, sugar, baking powder, baking soda & salt in a large bowl. Add oil, bananas, & sour milk. Mix well until
all flour is dampened. Beat vigorously by hand for 2 minutes. Add eggs & beat for 2 more minutes. Stir in nuts. Pour into bundt pan that has been greased & floured. Bake at 350 for approximately 45 minutes. Cake is done when toothpick in center pulls out clean with no batter . Cool & remove from pan onto a plate. Also makes great muffins & mini loaves.
