2 (15 oz.) cans black-eyed peas, drained
1 (10 oz.) can diced Rotel tomatoes
1 small green pepper, diced
1/2 purple onion, diced
3/4 c. zesty Italian dressing
1 tbsp. lime juice
2 avocados, diced
1 tomato, diced
1 can small black olives, sliced
fresh cilantro, chopped, to taste

Directions:

Mix together the first 6 ingredients & let sit for 4 hours in refrigerator. Add the avocados, tomato, black olives & cilantro. Serve with chips.
