1 lb. shrimp in shell (shell is optional)
1/3 c. olive oil
1 tomato, chopped
1/4 tsp. oregano
1-2 tbsp. fresh parsley
1 red hot pepper, cut in 1/6 in. slices
black pepper to taste
1/2 c. feta cheese
cooked rice

Directions:
Directions:
Using large skillet, heat olive oil over medium heat. Add & sauté tomato, oregano, parsley & pepper until softened. Add shrimp, cook until done, shrimp will turn pink when done. Add feta cheese, continue cooking until cheese is melted. When cheese is melted, you are ready to serve. Pour into large serving bowl. Serve with rice, a green salad with balsamic vinaigrette dressing and crusty bread.
